Thomas’s culinary career began in Nottingham, where he trained as a chef at Nottingham Trent University before moving to London. His journey saw him rise through the ranks at Ramsay’s iconic Bread Street Kitchen, Michelin-starred Pétrus, and the esteemed Maze. Along the way, he refined his passion for fine dining, global flavors, and innovative techniques.
Beyond Ramsay’s kitchens, Thomas further developed his craft at Frenchie in Covent Garden, Craft London, and The Princess of Shoreditch, where he honed skills in butchery, pickling, and experimental cuisine. His resilience during the pandemic led him to establish a fine dining takeaway service, showcasing his adaptability and commitment to delivering exceptional food experiences.
Now, Thomas embarks on a new chapter at The Swan, working closely with his team to introduce a dynamic small plate menu alongside its established large plate offering. Drawing on years of expertise from world-class kitchens, Thomas aims to create exciting dishes that celebrate fresh, seasonal ingredients and bold flavors.

The Swan offers ten beautifully designed boutique-style bedrooms, where character meets comfort. Guests can indulge in a restful stay and wake up to a hearty, freshly prepared breakfast. The Swan is open 7 days, serving lunch Wednesday to Sunday 12pm to 2.30pm and dinner Wednesday to Saturday 6.30pm to 9pm.
